We mix upstairs from the room you are sitting in, forty bottles to a batch, and we pour and label them by hand. A batch takes a morning and then rests three weeks before it goes on the shelf, because gel that has not rested pulls away at the tip. Every colour is named after the place we took it from — slate at Kalk Bay on a low tide, brick dust on the Rooiklip road. If a colour sells out it comes back when we get round to mixing it, and not before.
