Water that has been underground since before the Cape was mapped
Rain lands on the Groenlandberg at about 1 040 metres and then disappears into Table Mountain sandstone for roughly 280 years before it finds its way out again at our spring head. It comes up at 11.4 °C in January and 11.4 °C in July, at around 4 200 litres an hour, and it has never once been pumped — the mountain does the work and we put a pipe under it. The bottling shed stands 60 metres from the eye of the spring, which is the entire point of the operation: the water is in glass within four minutes of seeing daylight.
