See what we sellA koesister is not a koeksister. Ours are the round Cape Malay ones — cinnamon, ginger and cardamom in the dough, fried, dropped straight into hot syrup and rolled in coconut while they are still wet. That last part is the whole argument for coming in early. The coconut has to go on while the syrup is still moving, or it sits on the outside like dust instead of going into it, and by the afternoon the same koesister has gone dense and sweet in a way nobody who grew up eating them will accept. So we fry from five, and the tray is finished when it is finished — usually somewhere before eleven on a Saturday. Nothing is held over to the next day and nothing is made the night before. Boeber is a different matter. It is a Ramadan thing — vermicelli, sago, cardamom and rose water, cooked in one pot and ladled out at the counter when the fast breaks — and we have never made it outside the month, because it is not a pudding, it is a marker. Ask for it in September and you will get a kit to take home and a straight answer about why.
