Bread comes up from the bakery on Mooki Street twice a day, so nothing on this counter has been standing since morning, and when the last loaf is gone we lock the hatch — on a good Friday that is before six. The chips are cut here out of potatoes, not poured out of a bag, and the atchar and the chilli sauce are cooked in the back on a Sunday and bottled the same week. Ntombi opened the Orlando East counter in 2011 with one griddle and a fold-out table. The other three are run by people she trained, and two of them are her children.
