The pods come off big trees on communal land around Musina and Makhado, knocked down and split by people who have been doing it a great deal longer than we have been buying it. We pay per kilo of whole pod at the collection point and we pay on the day, because a harvester who waits three weeks for money goes and sells to somebody else next season. Moringa is easier. It grows fast on smallholdings outside Tzaneen and we take the leaf within a day of it being stripped, dried on shade racks and never over heat. Both of them go through the same stone mill in our shed on the Duiwelskloof road. We mill on Tuesdays and Fridays, and whatever comes off the stones in the morning is at the post office by four.
