Behind the filling station

The drying room is behind the filling station on the N1, four kilometres north of Beaufort West, and it was a walk-in fridge until 2014. The spice is coriander we roast and crack ourselves, rock salt, black pepper and brown vinegar, and nothing else has ever gone into it. Beef hangs eight days in summer and ten in winter, wors hangs two, and we have never put a fan on any of it to hurry it along. That is the whole business — my brother cuts, I pack, and the counter opens at six.

It is 1 400 km to Johannesburg and one good stop

Most of our orders go to people leaving before five in the morning. Tell us the day you drive and we pack the box the afternoon before, so nothing has been standing in a fridge waiting for you.
