Everything is made in one Italian batch freezer standing behind the glass in Obs, about sixty litres on a good day, which is why the list is short and why it moves when the fruit moves. We churn on Tuesday and Friday and the tubs go into the cold room the same afternoon. Nothing sits there longer than four days. Everything comes down in the cooler boxes on Tuesday and Friday afternoons, which is why Friday evening is when that shelf is fullest and Monday is when it is thinnest.
