The fruit, and what pressing it cold actually does

Every crate comes off the market floor in Epping on a Monday and a Thursday morning, bought by one of us standing there at four with a torch rather than by an agent on a phone. The spanspek we drive out for ourselves, to a farm past Bonnievale, because a melon picked hard travels beautifully and tastes of nothing at all. Cold-pressed means the fruit is milled and then squeezed under a hydraulic plate. No blade, no heat, nothing warmed and so nothing cooked, which is why a bottle keeps about three days in a fridge instead of three months on a shelf. It is a slow way to make a drink and it wastes a great deal of fruit, and it is the only reason any of this tastes the way it does.
